Meat workshop sanitation and disinfection

1.Basic knowledge of disinfection

Disinfection refers to the removal or killing of pathogenic microorganisms on the transmission medium to make it pollution-free. It does not mean to kill all microorganisms, including spores. Commonly used disinfection methods include hot disinfection and cold disinfection. Currently, the commonly used methods for meat products are: sodium hypochlorite and alcohol cold disinfection.

2.Configuration and maintenance of health facilities:

1)The workshop should be equipped with sufficient sanitary facilities according to the number of personnel in each position. Each person should have a shoe cabinet and a locker. The number of toilets, showers, wash basins, disinfection pools, etc. should ensure that employees can perform according to the standards. The number and performance of ozone generators should meet the requirements of space disinfection standards. When sanitary facilities are damaged, they must be repaired in time, and a dedicated person should be assigned to check them in each shift.

2)Toilets and showers should be disinfected with 150-200ppm sodium hypochlorite solution once per shift; the locker room should be kept clean and dry; rubber shoes should be brushed and disinfected once a day.

3)Air shower and foot disinfection:

Personnel entering the workshop should enter the air shower room. Each group should not have too many people. During the air shower process, the body should be rotated to ensure that all parts are air showered evenly. The air shower time should not be less than 30 seconds. Personnel in low-temperature processes and personnel in high-temperature production areas must be on their feet when entering the workshop. Step disinfection (soaking in 150-200ppm sodium hypochlorite solution).
